A little behind ( 3.17.09 )

Dorian got up with the kids on St. Patrick's Day, and we had talked about making the kids green pancakes. Well, that was forgotten, so to celebrate the day, i made sure to have it for dinner instead.

James didn't want to smile like I was asking him to do, so he was a little mad! (I see this face at least once a day)

Mr. Carson. Excited for his GREEN dinner.

Finally happy to take a picture. Can we say mood swings!?!

32 weeks

This is for all you crazy people who have been wanting to see my belly. Well, here it is plus all the weight I've gained too! :o) Enjoy, because I sure don't *LOVE* looking at these pictures. Maybe if my face was out of it I'd feel a little different.

I had an ultrasound yesterday and it was confirmed that indeed the baby is still a girl. That's good news, because I even had a boy name picked out just incase. It almost seemed too good to be true. We also got a little picture of her hair. It's not the greatest picture, but she for sure has some. Although the technician said it's not very long.....

GROW, HAIR GROW!! We need enough for clippies and bows.
(I was fortunate enough to have boys with a TON of hair, let's not have a bald little girl!)

Other good news is my placenta has moved, and I no longer have marginal placenta previa. Now we can shoot for a natural birth. We'll see how that goes. :o)

I'll try and post our most recent ultrasound pictures of baby girl Ducker soon. (I don't have a scanner, so I'd have to run to a friends house.)

I'm so making this soon!!!

Sweet Pork Tacos with Cilantro Lime Slaw

stolen from here :o)

Cilantro Lime Slaw
1 package Cole Slaw or whole shredded cabbage (Summer used red cabbage in her demonstration......so I bought red cabbage too. I'm sure it's healthier. Or something.)
1 c. Mayonnaise
1 c. Cilantro, chopped
1 tsp. minced Garlic
1/4 tsp. Cayenne Pepper or a dash of your favorite hot sauce
1/2 tsp. salt
2 tbsp. Lime Juice
1/2 tsp. Cumin

Combine all but slaw in a mini food processor or chop and combine yourself. Mix desired amount of dressing with slaw mix no more than 30 minutes before serving.
(I used the above recipe with only 1/2 a head of red cabbage and it was perfect for my taste. I liked the slaw to be more juicy. And we didn't need as much slaw because I didn't make as much meat as the recipe below.)

Roasted Sweet Pork
6 (approx) pounds Pork butt/shoulder
1 19 oz. can Red Enchilada Sauce
1 can Dr. Pepper (20 oz)
2 tsp. Chili Powder
1 tsp. Cumin
1 tsp. salt
1 Clove Garlic or 1 tsp. Garlic Powder
1 1/2 c. Brown Sugar
1/2 onion, chopped
1/4 cup fresh cilantro, chopped

Combine all ingredients into your crockpot and cook on low overnight or until meat is tender.

Then she placed the meat on top of a tortilla (option: used grilled corn tortillas.......but I'm sure flour would be good too) and then the slaw on top of that. Fold in half and take your first mouth-watering bite. She also suggested using the meat in burritos or tostadas as well. Or heck, you know this stuff would be good on a sandwich, or even just by itself.......with a fork. Just sayin'. ;o)

Enjoy.

A random trip to Boise

The first weekend of March the kids and I decided to take a trip to Boise and spend it with my friend Leslie. Don't ask me why I never get a picture of us together, but I'm a little bummed about it. We had a grand time (except for bedtimes) and Dorian got a TON of work done on the house. Good job D! Thanks Leslie for letting us invade your home and even stay an extra day. You're awesome.

Here are a few pics and a video of our trip. I didn't pull out the camera NEARLY enough.

MARDI GRAS...AGAIN

Mardi Gras came to us in box again last weekend. Last year was so exciting, but this year was just as good. We're so happy that we have such thoughtful family back in New Orleans! We sure do miss them. Thank you Aunt Sarah and Uncle Elroy for making a regular day an extra-ordinary day! :o)

My Super Spiritual Kids

When we went home to Seattle to visit, Carson got a Book of Mormon. He hasn't been able to put it down since. James has been jealous of this, so we got one for him too. Here they are reading them, and I promise this is their own doing. I don't tell them to sit down and read them, they just do it themselves. Although, a lot of times it's an ABC song or some other thing they know by heart coming out of their mouths while they read them.
